Sausage and Tomato Tray Bake

Delicious and easy weekend supper for all the family all cooked in a single tray Try our succulent Yorkshire sausage (in honour of Yorkshire day this week) to perfectly compliment the sweetness of the multi-coloured cherry tomatoes.  Fresh herbs: thyme, rosemary and bay really bring out the flavours in this dish.

Method

Pre-heat the oven to 180 and find a large roasting tray – one that is big enough to take all the tomatoes – (half roasted and half stewed) the tomatoes will turn into a lovely rich and chunky sauce to pour over the sausages when cooked.

Lay out the tomatoes in the tray and add the fresh herbs, the garlic and the oregano.  Drizzle with extra virgin olive oil and balsamic vinegar (to taste) and season with salt and pepper.

Toss together on the tray and with the sausages back on top, put the tray in the pre-heated oven for approximately half an hour.

Remove tray from oven and give it a bit of a shake.  Turn the sausages over and return to oven for another 15 – 30 minutes – the time will vary depending on personal preference

Once cooked you will have a rich tomato-ey sauce.  If the consistency is too thin, remove the sausages, and place the tray carefully on the hob to cook it down to your preferred consistency.

Serve with a lovely herby mash!
