This fresh, light, easy to make and filling salad uses our own natural cure bacon.  It would make a great lunch packed meal.  You could add some salad leaves or roll it up in a couple of large iceberg lettuce leaves.  Add some chopped avocado and we guarantee this super compliant Whole 30 meal will keep you full til supper!

This super compliant Whole 30 meal is delicious and healthy with our natural cured bacon

 

Ingredients

You will need 😉

2 cups of fresh broccoli florets (chopped)

2 cups of cauliflower florets (bite size or chopped)

1 cup of grapes (halved)

1/3 cup of sliced red onion

3 tbspn of sunflower seeds (roasted)

2 spring onions

4 strips of compliant natural cured bacon (crisped)

2/3 cup of olive oil mayo

juice of 1/2 lemon (and zest)

1 tsp coconut aminos (choose soy free)

2 tsp fresh thyme

How to make the salad –

Cook the broccoli and cauliflower florets to taste (al dente works best)

Prepare the remaining ingredients: roast the sunflower seeds in a hot dry frying pan, halve the grapes, crisp up the bacon and chop up the spring onions (including a little of the green part to use as garnish if you wish)

Make up your mayo as per the instructions on this link (this is the easiest mayo recipe ever)

Juice and zest half a lemon and mix with the mayo, coconut aminos (remember to choose the non soy brand) and fresh thyme.

Place all your ingredients into a bowl, add the mayo mix and combine all the ingredients.

Garnish with the green tops from the spring onions and enjoy!
