Tasty Sausage Casserole

There is nothing more comforting than a delicious sausage casserole on a cold November evening to welcome the family home from school and work.

This lovely dish serves 6 (with mash or curly kale or both) and is cooked on the stove top.  For this simple real food tea you will need:-

Ingredients for our warming sausage casserole


1 tbsp olive oil

6 Primal Cut pork sausages (we used 3 Bratwurst sausages and divided them between us)

1 onion

1 red pepper

2 carrots

2 cloves of garlic

1 x 400g chopped tomatoes

300 ml chicken stock

1 tbsp tomato puree

1 x 400g of Borlotti beans (November seasonal food)

2 tbsp fresh sage

2 tsp Worcestershire sauce

Brown the sausages in a large pan using the olive oil to fry

Transfer sausages out of the pan and add in the chopped onion, pepper and carrots

Fry for 5 minutes

Add the garlic and fry  for 10 secs

Take the chopped tomatoes, stock, tomato puree and stir til bubbling

Now add the beans and sausages, cover and simmer for 15 – 20 mins

(Meanwhile, prepare the mash and curly kale to serve)

After 15- 20 mins, add the chopped sage and  Worcestershire sauce stir and serve piping hot!
